broccoli, Chicken, Cheese, burrito Bowl
This Cheesy Broccoli, Chicken and and potato bowl recipe is easy to make for lunch, freezer meals, or weeknight dinners, Serve it in a bowl, or wrapped in a tortilla. This is really comfort food at it's best. Great for OAMC, freezer recipes, make ahead recipes etc. Made with perfectly seasoned sour cream it is omgosh good!
Start by turning your saute on, add butter and diced onions, saute until almost translucent. (about 3 or 4 min) stirring constantly. Add 1/4 tsp salt and 1/4 tsp pepper. When done add to a large bowl.
Next add frozen chicken thighs (To me, they are more tender and juicier.) Add to your instant pot with 1 cup chicken broth. Place your lid on, make sure you are on sealing and not venting, press manual or pressure cook for 25 min with an instant release.
Open lid, and remove chicken thighs, remove skin and shred, but keep the pieces bigger. Move to a large bowl.
Dice potatoes, and place into your instant pot with the chicken broth that is already in there from your chicken. Place your lid on, make sure you are on sealing and not venting, press manual or pressure cook for 10 minutes high pressure. When timer goes off, instant release. Use a slotted spoon and move potatoes to your chicken bowl and add 1 cup cheese on top.
Place broccoli in your instant pot in a steamer basket (with chicken broth from potatoes and chicken, place your lid on, make sure you are on sealing and not venting, press the steam button and take it down to 3 minutes. (Instant Release) Use a slotted spoon and move to your chicken bowl.
Note: If you like firmer broccoli, Steam for 0 min, 1 or 2 min for medium, 3 for soft broccoli.
In another bowl add, sour cream, garlic salt, onion powder, dill, paprika and heavy cream, mix well.
Note: this will be salty, but it flavors the entire dish perfectly!
Gently mix sauce with chicken, broccoli mixture (don't smash your potatoes) place mixture in a casserole dish and top with 1/2 cup shredded cheese. (I used fiesta cheese) Broil for 4 min on high.
Scoop you out some in a bowl, add to a tortilla for burritos, make freezer meals, and enjoy!~ Oh so good!
You Will Need
5 large chicken thighs
1 Cups Chicken Broth
2 TBSP Butter
1 med/lg Onion
2 Cups Broccoli
7 medium potatoes (I used Russet) Peeled and Diced
1 1/2 cup fiesta Cheese (divided)
1/4 tsp Salt
1/4 tsp Pepper
For the Sauce-
1/2 Cup Sour Cream (I used fat free)
1/2 Cup Heavy Cream
1 tsp Garlic Salt
1 tsp Onion Powder
1 tsp dry dill
1 tsp Paprika
