Instant Pot Irish
Colcannon Potatoes

You Will Need

1 Stick Butter (divided)
1/2 Head Of cabbage 
1 Medium Onion
2 Garlic, Onion Drops (or 2 tsp minced garlic, 2 tsp onion powder)
2 tsp Garlic Salt
1 tsp Pepper (or pepper to taste)
2 Cups Bone Broth (1 if you want them thicker)
8 Large Red Potatoes
1 Package Cream Cheese
1/4 cup green onion (more to garnish)
1/2 Cup Parmesan Cheese
Salt and Pepper To Taste

Garnish with Parsley and fried chopped bacon if desired.

Every Irish family has its own colcannon recipe, Colcannon is the perfect Irish dish for St. Patrick's Day combining the flavors of sweet cabbage, fried onion, and creamy mashed potatoes.

You can add additional toppings

like bacon and cheese to make them even more incredible. 

Traditional boiled Irish potatoes served alongside corned beef, I like to serve up Colcannon Irish Mashed Potatoes. Made with potatoes, cream, and garlic that get mashed together with green cabbage and then get topped with crispy bacon & lots of  butter!

Instant Pot Colcannon Potatoes

  • Start by turning your saute on 

  • Add 3 TB butter, wait till melted and hot 

  • Add 1/2 head of cabbage (shredded) and 1 medium onion diced

  • Saute for a few mins, and add garlic, onion drops, or 2 tsp minced garlic and onion powder

  • Then, add garlic salt, pepper, bone broth, potatoes

  • Turn your saute off and put on your lid

  • Press manual or pressure cook 12 min.

  • After your pressure button goes down remove the lid and add cream cheese, green onion, Parmesan cheese, and salt to taste. Enjoy!

Garnish with parsley, bacon and cheese if desired

Stove Top Colcannon Potatoes

  • Place cabbage and bone broth in a large saucepan with Garlic, Onion Drops (or 2 tsp minced garlic, ,onion powder, Garlic ; bring to a boil. Reduce heat; simmer, covered, until cabbage is tender, about 10 minutes. Drain, reserving cooking liquid; keep cabbage warm in separate dish.

  • In same pan, combine potatoes and reserved cooking liquid. Add additional bone broth (chicken broth) to cover potatoes; bring to a boil. reduce heat; cook, uncovered, until potatoes are tender, 15-20 minutes. When potatoes are done, drain and  mash with cabbage,  Butter, Parmesan Cheese, Onion, Salt and pepper to taste)and a Package Cream Cheese, green onion (sliced very thin and parsley) More to garnish 
     

  • Garnish with Parsley and fried chopped bacon if desired.

Colcannon is so loved,  that it has inspired a traditional Irish song by its own name or by the name, “The Skillet Pot,” and has been recorded by many artists.

What are Colcannon Potatoes?

Colcannon is a traditional Irish mashed potato dish, and is a hearty and comfort food classic in Ireland.

This dish is a year-round staple, although it also makes special appearances at holidays, including St. Patrick’s Day, and most especially at Halloween where sneaky chefs conceal lucky charms or coins within the Colcannon potatoes. Watch out for those thimbles!!
